Ingredients:

1/4c coconut oil, softened
1/4c honey
2 eggs
1/2tsp baking powder
1/8tsp sea salt
1 chopped stalk of rhubarb
1c blueberries
1 branch of fresh rosemary, chopped finely or ground up in food processor
1c spelt flour

How To:

Mix all ingredients in a medium bowl until well-combined
Pour batter into a muffin tin and sprinkle the tops with maple sugar
Bake at 375 for 35min

Makes a half dozen delicious muffins!
