*wheat free, casein-free, vegetarian
3 Tbsp sun-dried tomatoes chopped
2 Tbsp fresh herbs chopped (rosemary, sage, thyme, whatever you have)
2 Tbsp dijon or stone ground mustard
1 Tbsp brown sugar/demerara/cane sugar
1 cup almond milk
1/2 cup Daiya vegan cheese (or any grated cheese you wish; however the recipe will not be casein-free if you use real cheese!)
Mix the above ingredients in a large bowl, then add the dry ingredients listed below:
1.5 cups whole spelt flour
2/3 cup cornmeal
1/2 tsp sea salt
1.5 tsp baking powder
Mix thoroughly, then spoon the batter into a muffin tin. Add some extra Daiya or cheese and coarse sea salt on the tops of each muffin to make a crispy and delicious crust when they bake.
Bake for 20minutes at 400 F.
