I discovered this amazing banana bread recipe last month that uses no flour/no grains and no dairy and I have made it almost every week. This is the best banana bread you will ever have, and it is both healthy and easy to make!
I have adapted the recipe from Civilized Caveman Cooking Creations which is a great Paleo diet resource, but I have made some minor changes and additions. The Paleo diet is a lifestyle change that incorporates both exercise and eating healthfully by including lean protein, fruits, vegetables, nuts, seeds and healthy oils while omitting processed foods, dairy, grains, legumes and sugar.
This recipe is ideal for those avoiding sugar, wheat, grains, or dairy, and it is a great treat for those on a Paleo diet or weight-loss diet.

The Best Paleo Banana Bread
4 ripe bananas
1/2 cup almond butter
4 tablespoons coconut oil
1/2 cup coconut flour
1/4 cup raw cacao nibs
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
pinch of salt
Preheat your oven to 350F and use coconut oil to grease a loaf pan.
Combine the bananas, eggs, almond butter and coconut oil in a mixer or food processor. Add in the coconut flour, cacao nibs, cinnamon, baking soda, baking powder, vanilla and salt and mix thoroughly.
Pour the batter evenly into a greased baking pan. Bake for 45minutes or until a knife inserted in the middle comes out clean.
Remove from the oven and flip the banana bread onto a rack to cool. Slice, and serve!
This bread gets eaten very quickly as is, or with almond butter or coconut manna spread on it. I have also made it into french toast which was delicious!
